The built-in fix

Go to Settings → Display → Full screen apps (sometimes listed as App aspect ratio). Find the misbehaving app and set it to Full screen. Android stretches the app to the panel without breaking its layout.

If the app still misbehaves

Toggle the same setting off and on with the app closed, or add the "restart on aspect-ratio change" option where Samsung exposes it — that forces the app to re-lay-out cleanly when you unfold instead of keeping the phone-screen dimensions.
